A “global scale” restaurant by a chef of the future

A Tokyo Culinary College student restaurant will be open for a limited time at GRAND SESSION, a state-of-the-art bar that combines food, music, and art!

 

This time, the students of the "research department" of the Tokyo Yamate Culinary College will open a store.

In addition to the solid skills acquired in the “everyday cooking practice” at the Tokyo Yamate Culinary College, we are cultivating deep knowledge and know-how in the research departments that specialize in each field.

These students are promising professionals in the future who show off their skills at the seven full-fledged Tabelog restaurants in the school building.

At this opening, the “Sushi Research Department” and “Bizen Chinese Research Department” will provide menus from among the many research departments.

   

The menus provided by each research department are all gourmet dishes that have been refined and refined every day.

In addition, we have set up themes that consider SDGs and environmental issues, and have devised food that is considered on a “global scale”.

 

 

The theme of the sushi research department is

"Fukushima Prefecture Reconstruction Assistance".We use safe and delicious fresh fish caught in Fukushima Prefecture for the ingredients that are the lifeblood of sushi!

 

Bizen China Research Department

Based on the theme of "local production for local consumption," the products are SDGs-friendly products that use vegetables harvested in Setagaya, where the school is located.
