Hello everyone 😊 The signs of winter are approaching day by day ⛄️🧣

AlwaysTOKYO YAMANOTEThank you for visiting the blog of

.

Today, I would like to introduce the first-year Chinese cooking major practice😄

A master chef who has led Chinese cuisine in JapanThe owner chef of "Guangdong Meisai Akasaka Rikyu",Tan Hikoaki (Hikoaki Tan)ChefWe invited you to give us a special class!😳👏✨

Chef Eiko TanGoes beyond Cantonese and Chinese cuisine, knows the tastes of Japanese people, carefully selects ingredients, and makes Cantonese dishes that bring out the best flavors of the ingredients!

.

Today we use one migratory crab per person!! ️🦀🦀

The menu you gave me today

Tokina stir-fried fan shellfish - Stir-fried scallops and seasonal vegetables~

Bean Drum Steamed Boar Meat ~Steamed Pork Touchi~

Crab fried rice ~crab fried rice~

First of all, we will divide the ingredients and prepare them.

Once you're ready, it's time to start cooking!

Chef Tan also instructed us right next to the students.

Go around each group and check the heat and the timing of adding ingredients!

Chef Tan holds a pot and teaches students how to season it❗️

How to put seasoning is also an important point! This will determine the taste 😳☝️

Combined with the scallops, the vegetables are cut into large pieces, and the brightly colored snap peas used as they are are used to finish the stir-fried fan shellfish.

Pork is seasoned with touchi and Kishu plum, then steamed and topped with green onions and chili peppers.

Finally, pour peanut oil flavored with garlic over the top and it's done❗️

Bean knowledge here!Characteristics of Cantonese cuisine?

“Food is in Guangzhou.” As the saying goes, even in China where there is a high level of interest in food, this area is by far the most passionate about food!

One of the reasons is that it is a treasure trove of ingredients.
The area centered on Guangdong is a coastal area with high temperatures and high rainfall, and is rich in marine seafood.Because of its close proximity to Southeast Asian countries, flavorings, Worcestershire sauce, mayonnaise, and other seasonings have been greatly influenced by the West.It is characterized by its mellow flavor, probably because of the active exchange between Japan and overseas.

Well, today's ✨ main dish ✨ crab fried rice 🦀

Fried rice is a menu that we do many times in class❗️

As you can see from the pot swing ❗️ it's a Chinese dish with strong heat, but there are only a few classes left for the first graders.

I will finish it with my familiar hands ❗️❗️

Serve on a plate

XNUMX items are complete ✨

I have a message for my students.

Ever since my training days, I have always embraced"I want to make something delicious"A single-minded thought. His inquisitive mind never ends,"If you don't eat delicious food, you can't make delicious food."You can objectively check your own taste by knowing the taste that is supported by the world. That's why I want everyone to eat a lot of delicious food regardless of genre and create their own standard of deliciousness.

I talked to you.

The words spoken by the master chef, who has been leading Chinese cuisine in Japan for many years, were simple yet profound, and touched my heart.
