The theme is“Basic Training on Vegetarian and Dietary Diversity”!

Amidst all the talk about food diversity, there are probably many people who often hear the words vegetarian and vegan, but don't know what the actual differences are.

This time, after learning the basics of food diversity, we actually made our own vegan dishes!

Lecture first!

Students take it seriously.

This time, I will introduce a little about the contents of the lecture!

Do you know the origin of the word vegetarian?

Vegetables are vegetables in English, so many people think that the word is somehow derived from vegetables.

Vegetarian is actually a Latin word"Healthy, Fresh, Invigorating"Represents the meaning“vegetus”It comes from!

In other words, vegetarians are people who refrain from eating animal products such as meat and fish as much as possible for their health.

Vegetarians are classified according to the ingredients they eat, including vegans.

Why do we need to learn this stuff because...

The number of vegetarians is increasing every year!

According to a report by the Japan Tourism Agency, there are 6.3 million vegetarians in the world, and the number is said to be increasing year by year!

Vegetarian and vegan foreign tourists visiting Japan are 145 to 190 million annually, and their food and drink expenses are450~600億円is estimated.

On the other hand, according to a survey of foreign vegetarians and vegans conducted by the Japan Tourism Agency, many opinions were gathered that the response of Japanese restaurants, etc. was inadequate.Through this survey, many Japanese restaurants, etc.Lack of basic knowledgeIt is clear that we do not know how to deal with it because we are doing it.

In the future, the Japanese restaurant industry will alsoBarrier-free foodWe must respond to

Therefore, our students, who will be responsible for the food and beverage industry in the future, need to acquire the knowledge and skills to be able to handle all kinds of customers!

Then let's move on to practice! 😊

The menu is chickpea paste, and you can enjoy hummus and avocado chocolate mousse with bread and vegetable sticks! 🥑🥥

Eggs cannot be used for vegan dishes, so we use vegetable oils such as coconut oil instead!

When cooking for vegans, you need to be careful about the alcohol contained in the seasonings!First of all, we thoroughly check the materials!

Students are also very interested in the first knowledge and menu that is a little different from usual 👀

A lot of questions were flying around during the training!
