[Special Lecturer] Chef Tezuka, a long-established luxury sushi restaurant

Tokyo Yamate Cooking College!Introducing today's special lecturer class!

Yoshinori Tezuka, the 4th generation chef of Matsunozushi, a long-established high-end sushi restaurant founded in XNUMX

Chef Tezuka is active not only in Japan but also overseas as a sushi chef.

He has experience making sushi at the homes of celebrities such as "YOSHIKI-san" and "Sakana-kun", and other celebrities.

Overseas, we served sushi to 500 guests at a British royal event.

He also talks directly with Prince Charles about sushi and Japanese culture.

In New York, he is widely active, giving lectures at United Nations-related events!

I will study "sushi" from Chef Tezuka!

First, what is sushi?We talked about the history of sushi.

In addition, Chef Tezuka himself is also working on a new initiative to match the times and offers "Vegetable Sushi".

He says that he is working every day so that halal and vegetarian people can know the appeal of sushi!

At our school, we are also learning about “Halal food” and “Vegan” in our classes, so the students were listening while referring to them!

Next, Chef Tezuka actually made sushi and the students tasted it.

We prepared exactly the same thing as what we offer at the shop this time!

The students were surprised at the sushi that cost 3 yen per customer, but they tasted it while feeling various things!

Sushi chefs have only two processes, "cutting" and "making", but they put a lot of effort into these two processes.

For example, instead of cutting all the toppings to the same thickness, the thickness is changed every day depending on the type and part of the fish, and how many days it has been aged.

In addition, in the case of high-class custom sushi, the way of gripping is changed depending on the customer.

For example, the firmness of the sushi rice is changed depending on whether the customer eats with their hands or with chopsticks.

"Sushi craftsmen" need to be able to adapt to customers who only eat sushi and customers who want sake and snacks and sushi, such as changing the amount of rice.

In the practical training, after wholesale 3 pieces of horse mackerel, we will do it by ourselves!

Chef Tezuka himself came to each student and taught them carefully!

The method of cutting sashimi and the method of cutting sushi are slightly different!

Chef Tezuka taught me directly and my skills have improved even more! !
