1st year product development practice part2

The other day, a student in the first year of confectionery conducted the second product development training, so I will introduce it.

The theme this time is"Shelllot"

Charlotte is a mousse cake surrounded by strips of dough called biscuits.

The first product development was done with the theme of "Roll cake" just two months after I entered the school in June!

this time too, Creating russets (recipes)I'm going to go to the middle of the day!

It is also important to decide which ingredients to combine with other ingredients, and the ratio of gelatin to determine whether the mousse will harden or not!I calculated and decided the combination!

Each group will create the mousse inside, the biscuit dough around them, and the ingredients to match!

Since it is product development, of course, we will make the cake that we envision without any instructions from the teacher!

NormalPractice making every dayI've already made several cakes and such, so I don't just have the skills necessary for a pastry chef, such as which ingredients go well together.SensibilityYou can also wear 👍

But it's not as easy as making a cake just the way you want it!

Of course, there are things that don't go well while making it and things that you can't imagine!
