"Nadaman" Chef Kanamaru ~Special Class~

We regularly hold special lectures! !

And this time, Chef Kanemaru of "Nadaman" San Applause in the Imperial Hotel came and gave a class to the students!

The menu is

"Deep-fried lotus root scissors""Yellow radish"  

I learned the recipes that are actually used in the field🥢

First of all, he told us that the standard dishes have different characteristics, such as the difference in the attention to detail and how much effort is put into each restaurant, and the depth of the dishes!

In this way, the preparations for learning the traditional taste and the special taste are complete, and the practical training begins!

Chef Kanamaru will teach you how to make the preparations at the restaurant, and the students will earnestly steal the techniques🎩

For the deep-fried lotus root scissors, we learned how to cook it while retaining the texture and how to fry the batter to make it crispy! !

The importance of preparation was taught through the experience, and the explanation was very useful for the students☺️

Amberjack radish is equally important to prepare!

It's not how to make general amberjack daikon, but we're going to cook amberjack and daikon separately, which is done in an actual restaurant!

It is characterized by burning with sake, soy sauce and sugar to soften the body.
