In fact, Murang Shanti is currently sold at Cafe Mikuni's, and Madeleine was also sold at the store before!

Although it is a Western-style confectionery that has been around for a long time, Chef Asai has devised a way to make it acceptable even in today's times, and Chef Asai is particular about making it look like a floral pattern!

Also, all of the cakes served at Cafe Mikuni's do not use picks (the ones with the store's logo on them)!

Just by looking at the cake, you can tell it's a Cafe Mikuni cake.

Chef Asai personally explained to each student around each table the methods and tips for squeezing!

Madeleine Citron The

Regular madeleines are made with invert sugar or honey to give them a moist texture, but Chef Asai's madeleines do not contain invert sugar or honey!

This adds a crunchy texture that is rare for madeleines!


Also, it is characterized by adding not only lemon but also lime to create a complex scent 👏👏

The students themselves have made many madeleines in the past, but this was the first time they had made a madeleine with a crispy texture like Chef Asai, so it was a learning experience for them! 👍
