ANA Crowne Plaza Hotel Special Class by Chef Uchida

Students in their first year of cooking participated in Chinese cooking training today.

ANA Crowne Plaza Hotel Kyoto 

Kazuo Uchida, head chef of Chinese restaurant "Shokko", gave a special class!

Today's menu is

"Golden Shrimp ~Golden Fried Shrimp~"

"Kung Pao Chicken - Sichuan-style sweet and spicy stir-fried chicken"

Chef Uchida personally taught us the two dishes!

Let's start with the golden shrimp!

We will prepare the shrimp and open the shrimp!

Chef Uchida also visited each table and gave us detailed instructions!

Chef Uchida's passion is "handmade from the bowl"

In this class, we learned how to make each vessel by hand!

To make the golden fried shrimp bowl, thinly roll out the dough mixed with chili peppers.

When you fry the thinly stretched dough in oil, it becomes like a crispy rice cracker.

Hold the carrot in the shape of a bowl and fry it!

One plate per person is ready!

Next, "Sichuan-style sweet and spicy chicken stir-fry"

First, make the vessel! Make seeds by mincing chicken and combining it with potatoes!

Paste around carrots

Add somen cut into short pieces.

Deep fry in oil

Here is the completed vessel!

Once you remove it from the carrot, it will be hollow inside, so you can stuff it inside while making stir-fried chicken.

We will arrange one plate for each person!

Nowadays, many restaurants use ready-made utensils, but Chef Uchida insists on making his dishes by hand from scratch, because he puts customer service first.

I was able to learn this perspective in today's class!
