INFINI Chef Kanai special class

Hello everyone!

At YAMANOTE, from the first year of confectionery, there is a special training course that you can choose by yourself once a week!

In one of the classes, ``Pastry Chef Major'', we held a special class by the owner pastry chef!

In the major training course, you can take special classes from chefs who are active at the top of the professional field!

Even first-year students can learn about cutting-edge techniques and highly difficult cakes!

Today we had a special class from INFINI owner pastry chef Chef Kanai.

The menu is "Mont Blanc"

I learned Chef Kanai's recipe!

The demonstration will not only show how to make the recipe, but also talk about Chef Kanai's career and his time working in France.

They also talked about the hardships and rewards of owning their own shop!

The "sucre dough (tart dough)" used for Mont Blanc this time is created using two types of French flour, with Chef Kanai's particularity.

[Point💡] Japanese flour has lost its original aroma, but French wheat has the original aroma and has a crisp texture when eaten. is!

Crushed hazelnuts are added inside the tart to give it some texture.

Chef Kanai values ​​``fragrance'', and for this Mont Blanc,

Coffee is used for the ``ambivage'' (syrup) applied to the baked tart dough.

Coffee is also used in the Chantilly (fresh cream) in Mont Blanc to bring out the aroma when eaten.

During the training, Chef Kanai carefully visited each group and taught them directly!

Finally, make the Mont Blanc cream and squeeze it.
