After training in France, Chef Ishii became the head of the production department at a famous restaurant in Tokyo. I am a charismatic patisserie who opened my own patisserie in Meguro Ward in 2014👩‍🍳

First, make the ganache for the inside of the macaron!

Two types: chocolate and cafe!

This time, since the dough contains cacao mass, mix the meringue and cacao mass while it is still hot.

Use a piping bag to make the dough into the familiar round shape!

Put the squeezed dough into the oven!

Cut the baked dough and biscuit chocolate into slices horizontally.

Layer the chocolate and framboise sauce between the sliced ​​dough in a mille-feuille pattern.

Once everything is layered, put it in the fridge to harden!

Use a burner to remove the hardened dough from the mold and move on to the final finishing touch!

Spread framboise sauce all over and polish with glasage!

The students worked hard with stylish ideas unique to female chefs, such as squeezing coffee ganache and chocolate ganache into cacao macaron dough and recreating an opera!

Some students ask questions about what students who dream of opening their own shops should actively study, and what they should learn before starting their own business.
